Let's Cook Okonomiyaki A La Hiroshima
-Eat what you like-
on "NOJI de PAN"

Ingredients (serves 2)

 100 grams of Flour, 170cc of Water & 1/2 teaspoon
    of Salt for Okonomiyaki Batter mix. Very thin sliced
    Cabbage,

 Bean Sprouts, chopped Scallion,6 pcs. of thinly
    sliced Pork,

 2 Eggs, deep fried bits of Tempura batter mix or
    Squid Tempura, dried Bonito flakes, dried Green
    Seaweed flakes Sesame seeds, Chinese noodle,

 Okonomiyaki sauce, Worcestershire sauce,
    cooking oil, white or black pepper.

 If you like you can add on, Shrimp,
 Squid or Rice cakes.  Also, you can make it without
    Pork,Egg or other meats if you are a vegetarian.
 
 

Step-1

   Stir mix of flour, water and salt with wire or chop
   sticks,whisk until large lumps disappear,a little
   thinner than pancake mix --- 2~3 drippings
   when you hold the wire or chop sticks up above
   the mix.Put it on the side or in the refrigerator. 
 

 

 

 
  
 
  
 
 
 
 
 
 

 

 

 
 

Step-2

 
 Heat the Noji de Pan and spread the cooking
   oil on it.  Medium high to high heat.

Step-3

 
 Stir fry the Chinese noodle until becomes
   brownish color and mix with a bit of
   Worcestershire sauce if you like it sweeter.
   Put it on a plate for a moment and clean
   the pan for the next step. 
 

 

Step-4

 
 With a ladle, spread the Okonomiyaki batter mix
   on the pan in a round shape (about 1/8" inch
   thick and 8" to10" inches in diameter),
   spreading from the center towards the out side
   with circling motions, so it looks like a very thin
   pancake or French Crepe. 
 

Step-5

 
 On High heat.
 

 

Step-6

 
 Put a bit of the bonito flakes and deep fried
   Tempura batter mix first, then a handful of
   sliced cabbage and a 1/2 handful of bean
   sprouts on the spread as topping for each
   one of the pancakes.

Step-7

 
 Put 3 slices each of Pork on top of them.
 
 Evternal size of the NojiI de Pan is
   40cm × 60cm

 and fits on top of a gas or electric
   stove over 2 ranges as pictured.
 

 

Step-8

 
 Drip a little bit of the Okonomiyaki batter
   mix on both of them a binding agent.

 Note: Step 6 to 8 have to be done as
   quickly as possible to prevent the pancakes
   from becoming over cooked. 

Step-9

 
 Turn them over with a pair of large metal 
   spatula (This requires quite a bit of experience)
   Turn the heat down to low.

 

 

Step-10

 
 Press them several times with the spatulas
   and flatten the whole thing for about 3 to 5
   minutes until veggies and meats are steamed
   well together under the pancakes.

Step-11

 
 Place an egg on the pan. 
   Keeping the heat on low. 
 

 

 

Step-12

 
 Place the stir fried noodle on each egg,
   then the whole pile of meats, veggies &
   pancakes on top of them.
   Press them lightly with the spatulas.

Step-13

 
 Turn up the heat to medium and turn them
   over again for 1 minute.
 

 

Step-14

 
 Turn off the heat.  Spread sesame seeds and
   Okonomiyaki sauce, then green seaweed
   flakes and scallions on top of them. 
   Now, Okonomiyaki A La Hiroshima for 2 is
   done. If you like them hot and spicy, you
   can add mustard mixed into the
   Okonomiyaki sauce.

Step-15

 
   For a presentation, take a whole Noji de Pan
   with the hot Okonomiyaki on top of it to your
   table. Eat them with a small size spatula.
   That's our family style of Okonomiyaki dinner.
